Milk chocolate caramel/Candy Cupcakes

I have some very sweet friends that just moved to town, and I wanted to bake a little something for them just to say "Welcome" and we love you. They have a little boy who I`m thinking will love these cupcakes. The milk chocolate pairs so well with caramel and makes this cupcake a delightful treat.

Norwegian chocolate is one of a kind and I dare to say the best in the world. My fridge has been stocked up on this kind of chocolate since Christmas so I decided to make good use out of it.
Any chocolate can be used in this recipe but the better tasting chocolate, the better tasting the cupcakes will be. You can even use your favorite candy. For example starburst (which is infact gluten free) as they will melt just like chocolate over heat.

The basic muffin recipe is from Gluten-free baking classics, but I added my own touch to it to get the rich caramel milk chocolate flavor in it.
Candy cupcakes
1 cup granulated sugar
2 large eggs
1 1/4 cups brown rice flour mix
1/4 tsp salt
1 1/2 tsp baking powder
1/2 tsp xanthan gum
1/2 cup canola oil
1/4 cup whipping cream
1 tsp  pure vanilla extract
10 dumle (pieces of candy/chocolate)

Preheat oven to 350 F/180 C. Position rack in center of oven. Place cupcake baking liners in a 12-cupcake baking pan. Beat sugar and eggs in large bowl of electric mixer at medium speed for one minute. Add flour, salt, baking powder, xanthan gum, oil, whipping cream (heat up on stove and add candy then stir till it melts) and vanilla; beat at medium speed for one minute. Pour batter into prepared pan. Place in center of oven and bake for about 20 minutes or until centre springs back when touched and cupcakes are very lightly browned (bake about 35 minutes for nine-inch round, 40 minutes for eight-inch round). Cool on rack for five minutes. Remove cupcakes from pan onto rack and cool completely before icing.

Milk chocolate frosting:
3 Egg whites
2 Tbs Vanilla sugar
1/2 Cup Sugar
1 Chocolate bar
Place a pot with water on the stove and get it to boil. On top of that place a bowl with the ingredients, then using a hand mixer - mix it for about 7-10 minutes. Set aside. Pour the water out of the pot and put the chocolate bar in and let it melt. Pour melted chocolate to the other bowl with the egg white cream and stir together. Let cool in the fridge before you decorate the cupcakes.
PS: can also now be mixed in with whipped cream for a more sturdy frosting.

Super Sunday

 Sunday morning filled with sunshine and fresh fruit makes me happy. Today makes allot of people happy because it`s Super Bowl Sunday here in the US. The sport is football, and I know that there will be allot of food served throughout this day. Tri tip meat, nachos, hamburgers, hot dogs and all kinds of sweet desserts are on the menu. Whenever we go to gathering for events where there will be food to snack on, I always try to go prepared. So I made a few little treats that I will be posting throughout the day. These are baked goodies that are easy to pack in a bag and bring anywhere.
Mini Caramelized pear Pie`s can be served with a dollop of whipped vanilla cream and a warm cup of coffee. They have a sandy texture and reminded me of a pie crust, the filling is rich and sweet but just the perfect amount. 
For the base of these cakes I used a generic GF cupcake recipe. They always ask for eggs, but I skip this step because I am allergic to them. So without the eggs, the cakes gets very dense and perfect as a "coffee cake"...
Caramelized pears are super easy to make - melt butter and brown sugar, add cut up pears. Let cook for 4 minutes while you stir. The sauce (when warm) is beautiful as a topping on the dessert right before it`s eaten.

Sweet Sunday

I am extremely happy right now. In this very moment. Are you?
I`m thrilled that 2 weeks have gone by so fast, tomorrow I get to pick up my Husband at the airport. Freaking out moment ;) I am just so so in love.
Uhm.. I`m happy that i am all snuggled up in bed after this hard working day. My weekend just started.

Cupcakes makes me happy too. They are just wonderful to look at. The best thing about these ones, are that they are healthy-er-isch then most cupcakes. You can now get the small size of the cups so that the portions are way smaller. Which is a little trick to help people eat sweets in moderation
 The base of the cupcake is ripened bananas, which provide sweetness and flavor. I don`t know about you, but I would choose vanilla over chocolate any day, so this vanilla icing goes perfect with the muffin.
 
I will continue to work hard on making good GF treats.

Cupcakes Cupcakes Cupcakes!

 
Valentines Day is just around the corner, love is in the air and I am getting ready for this weekends Wedding show/fair here in Redding, CA. Everyday Fitness is having lots of specials for Brides this spring - enrollment fee is waived, BootY camps and great deals on training with professional trainers.
So I decided to bake some cute cupcakes. This recipe is from Passion4baking it`s a simple and basic recipe.  I will be trying this recipe with different types of flour. This time I just used regular flour aka I won`t be eating them. But I am on this little quest to learn how to decorate cute cupcakes, GF or not ;)
 
Mix the dry ingredients
 
Add the wet ingredients and let mix for a few minutes
 Lastly - add room temperature butter and mix well,
fill the cups only half full
I use a watermelon scoop
 Bake in the oven at 350F for 10-12 minutes,
I cant say for fact that they taste delicious.. But they sure look like they do =)
After having tested and tried many different frosting recipe`s -
here is one that I like. It`s sturdy, does not melt, easy to work with and it 
taste amazing. Especially if you use Mascarpone Cream Cheese.
Add whatever food coloring you desire...
 
For decorating I use a Ateco tip 869, and

Carrot Spice Cupcakes

Today I just had to have something sweet.. 
 I made these cupcakes a week ago, but wanted to test out the same recipe only this time, without eggs. Baking and eggs goes together like hands and mittens. They just fulfill each other so well. Oh, dear. But, I decided that these cupcakes are pretty healthy and might even be considered breakfast - having the carrots, walnuts and healthy flours in mind. So without the eggs they would only be a bit more dense. 
 
I used this icing to top it off with..
...I wish you could all come and eat cupcakes with me ;)
