Coast goodness

This weekend J and I took a little vacation on the coast of California. We stayed at Glass Beach Bed and Breakfast Inn in Fort Bragg and got to relax and just enjoy life for a few days. (The place we stayed at provided a really nice breakfast - even for a gluten free girl!)
The ocean is very special to me as I grew up on a tiny island on the coast of Norway. I love waves and the ocean breeze. One thing in particular that was exciting, was finding hidden hiking trails in the midst of the tallest trees on earth. J and I hiked, took pictures and had a really amazing time together.
 In Fort Bragg there is a raw food diet cooking school (Living light culinary art institute) that also has a little cafe. They serve raw ice cream and cakes, soaked and dehydrated grains, smoothies and juices and such. I had a tasty piece of raw cherry pie with chocolate sauce. This week I want to make a few alternative cakes/pies that are free from dairy, eggs, gluten etc. My first one I have already started making, it is a raw cheesecake. It will be really really good. Ill post it here later today =)

Tea time


I love this tea. 
Waking up early usually calls for a cup of hot tea and some light reading. As you can tell it`s mostly books about food, recipes and flavors..
I also spend my mornings planning my next work out. I am thrilled about my knees being back to it`s good self and I can finally do a hard sweaty work out again.
In the spirit of Tea, plus Valentine`s Day being right around the corner; here is a good old love quote for you ;)

Good morning

I am just stoked, thrilled and very happy this morning. There is so much to be happy about. My breakfast for example, apples with raw almond butter, pear sauce (my new food love as of late) and a couple of the protein bars I made yesterday.
Another thing I am grateful for is the feedback and the comments I`m getting for, and on this blog. Thank you sweet ones - I appreciate you so so much.

Here`s my little to do list for the day:
  • Go to the park, enjoy the sun
  • Bake?
  • Blog about "what kind of foods to eat to heal a hurt stomach"
  • Make an incredible, romantic dinner for my incredible Husband ;)
  • Got to church
  • Relax...ah yey
  • Watch The Biggest Looser (did not get to it yet)

Honey, what`s for dinner?

 
Basil. The perfect addition to a freshly boiled spaghetti dish. Rich in flavor, pairs well with garlic and tomatoes. I`m not sure I wanna call my sauce Pesto, because I skip the Parmesan cheese and the cooking part of it. But how about this;
 
 Adds new items to my list of foods that I have eaten this week. Do you remember I challenged you to count food items? Eating natural foods is exciting, I love being creative with the vegetables I have brought home from the store. And it`s so healthy for me.

Here are some my values, as far as what I eat most days;
I try to avoid anything white (bread, pasta white rice), fast food, soda, cakes, pastries, juice, candy, chips, processed meats and dairy, American cheese, canned foods high in sodium, other foods high in trans fat or sodium and processed grains (bleached flour etc). I am also careful about hydrogenated oils, foods with long shelf life and, uhm.. think that was it.

I choose real natural foods for most of my meals. Lots of vegetables, fruit, herbs, nuts, natural grains, as far as animal products goes - I use mostly organic, I get the grass fed meat if possible etc. These food items can be found at your local natural food market. Whenever I am in Yuba City I visit; The Sunflower Natural Food Market, they sell fresh out of the oven GF brownies, all kinds of beautiful organically grown foods, plus the staff there are super nice!
Anyway, back to my dinner. Even further back... to where I am wondering what to dish up. Jeffrey should be finishing up playing worship at church, and here it is on a text: "Honey what`s for dinner?".
I spy the basil in the fridge, the color makes me think of pistachios and.. I have one tomato left. Jeffrey will be home in about, 8 minutes. Ok, here we go. So I throw the pasta in a pot of boiling water, I let my vita-mix take care of 1/2 cup of pistachios, 2 cups of basil, 3 tbs of olive oil, one tomato and a clove of garlic while I check on the golden beets I`m heating up from earlier on.
He walks in the door, tells me it smells great, gives me a kiss, sits down at the dinner table, takes a bite... Then he tells me he likes it. Not sure about the beets (men in general?). But the pasta with the pesto sauce, he loves it. I feel like a super woman at this point.
And that`s how you dish up a perfect dairy, gluten and egg free meal in just a few minutes.

4 years ago, today

It was a very normal day that Monday 4 years ago. I had been at the gym, juiced vegetables and did homework. My heart had been achy, what felt like for years. Every single night I had to give my hopes and dreams of finding the love of my life, to God. I could not carry it alone. I had made sure God knew every single thing I wished for in the man of my dreams. He had to be able to play guitar for me, and piano. He had to... The list was long. No one seemed even close to fitting this description.

Little did I know that the day had arrived, the day that was gonna change my life forever. The 22nd of January 2007.
I got introduced to Jeffrey Kunde through my sister. We were at the big concert hall in Redding, the people crowd was thick. But I could not care less about anyone else. I knew I had layed eyes on someone very special, and extremely handsome. There was something about this guy..
To my surprise he made an effort to sit next to me. I did not pay attention to one word of what the speaker had to say on stage. Butterflies, careful chosen words and some tic tac toe was a part of our first few hours together.
What was suppose to be his 2 day stay in Redding, turned in to 6 days, he even canceled his dentist appointment at home. We had the most incredible days together...
Over the next 2 years we dated and got to know each other, on the 22nd of March 2009 Jeffrey told me for the very first time "I love you..." and moments later he proposed. With no doubt in my heart I said "YES!", and the rest is blissfull history. He is the man I had dreamed about, completely perfect for me. He plays both piano and guitar very well too.. ;)
