Giants!

Sunday funday in San Fran.. =) We got to go and see a baseball game - it was my very first, and it will not be the last one because we had allot of fun. I love my husband!

We had seats with a beautiful view over the bay area. Sad day as the Giants did not win. But hey, it was opening weekend and they have like 150 more games to play before this season is over.
Anyway, today I am running from one thing to the next - training, classes and paperwork. I made a delightful lunch that has been on our weekly rotation list now for a long time. It`s a simple dish with a few ingredients. Again, I am using heirloom tomatoes and basil as a part of my dish, but it is just that good! Here is the recipe for my basil avocado salad:
  • Brown rice, cooked
  • Heirloom tomatoes
  • Avocado (ripe)
  • Basil (fresh)
  • (Optionals: nuts, cheese, olive oil...) 
  • Cook up brown rice, cut up the rest of the ingredients and mix well. Serve it mixed with the rice or separate.
Try this recipe, it`s incredibly good.

Frisbee golf

On Sunday we found a park. It had big fields of grass, perfectly placed benches, massive trees and a frisbee golf court. J had shared stories from last year of his adventures here. I was excited to try out a new game and to soak up some sun, most of all I was excited to spend quality time with my very best friend, my Husband J.

 I quickly realized that Frisbee golf (or more correctly disc golf) is allot of fun. 
"The object of the game is to traverse a course from beginning to end in the fewest number of throws of the disc." -Rules, PDGA.com
Not that I can brag about my well-done-ness (scored 15 over par), but I loved the simplicity of just throwing the disc and doing my very best.
This is a perfect Sunday Fun-day game for families, friends and can even be done alone. Click here, and search for courses close to where you live. It`not just a recreational activity - there can be several fitness benefits of playing this game. Throwing the disc works muscle strength, walking the hilly course can work your heart/aerobic fitness and the mental challenge can lead to emotional relaxation.
Some of us need exercise disguised as fun =)

Best Friends

Staying on a work out schedule, a health regime, eating all organic foods or getting massages (who can afford?) is all beneficial to our health. Personally I don`t think there is anything as healthy as good friendships. Someone who is excited to see you, hear how you`ve been, how work is going. Someone that learns to know your weaknesses, as well as your strengths. Someone who take note of your child hood stories and keeps them in their hearts. A friend is a favorite. 

Throughout our life, we find friendship in our Moms, our Dads, fellow students, grandparents, siblings and teachers. Friends, if not already in family, becomes a part of our family. Family lifts us up in prayer, holds us accountable to reach our very highest potential and loves us no matter what.

My Husband is my greatest friend. He is rock solid and balances me out so well. Marriage is such a gift.. Anyways, today he is leaving for 2 weeks. He will be touring Australia with JesusCulture, and can I just add that it is summer over there. Pause. Yeah.. I am a little jealous. =) But I have stocked up on baking ingredients, gonna work allot and I have planned lots of hang outs with friends. It will just fly by, and soon enough I can throw myself in the arms of my Love again.

Morning Glory

Waking up in Chandler, Arizona is a good sign. It means that Christmas is here, vacation is on and I get to spend loads of time with Jeffrey`s amazing family. The anticipation of Christmas Day is closing in, there is gifts everywhere and everyone is in their best cheer. When I say there is gifts everywhere, I am not joking. Aunt Chy has 3 Christmas Tree`s in her house, and all of them have presents under them... 
We started our day at Einstein`s Bagel. Jeffrey got a cranberry bagel and a hot cup of coffee. I got a delicious cup of Mango Ceylon Tea. I like mine with honey and a dash of cream.

 I shared this in an earlier post, about my Grandma Jan bringing her own breakfast to the Bagel store. Fresh blueberries, raspberries, cherries and bananas. So we just got out some boxes, filled them with the goodies and brought it with us, to the very cozy breakfast place. It was about 10 of us around a long table, eating, laughing and having a blast. That`s what we do when we get together.
Oh and by the way, it was my 25th Birthday yesterday! Guess what my Husband got me. A gorgeous red Kitchen Aid Stand mixer =) This will help my baking so so much, cannot wait to start using it.

Fitness Christmas Gift Ideas

With Christmas right around the corner I put together a little list of ideas for Christmas gifts. 
These are mainly gonna be linked to exercising and health. They fit to people that are active and pursing health already, or to people that just might need a little help to get there. 
  • Work out Clothes - shorts, hoodies, under armor, shoes, Spinning bike gel seat cushion etc. You can find them in all kinds of price rangers, colors and brands.  I love Nike running pants and for sport bras - Champion is amazing.
  • Exersice equipment - work out DVD`s, a heart monitor, body bar, dumbbells, elliptical, jogging stroller, jump ropes etc. 

  • Books - diets, work out methods, gluten free cooking, cupcakes - find a cute well matching book for your friend or family member. 
I would recommend this book and work out method if you are looking to get a new fresh work out to use at home. Tracey Anderson method is incredibly effective.

    • Homemade goodies - This might be the most time consuming one of them all. But so Made With Love. You can bake your best cookies, favorite cake or little granola bars and wrap them in really cute boxes. Or how about putting together a healthy snack basket... superfoods like goji berries, nuts and dried fruit, raw chocolate balls. 
    • Gym membership - This might be for the select few that would actually love getting a membership. Otherwise it might be taken wrong. The good thing is that most of the time there is money to save on buying a years worth of membership rather then month to month.
    • Work out partner - give of your time and offer to be someones running friends once a week, or start playing tennis on the weekends.
      One year, even before we were engaged, Jeffrey got me a Vitamix for Christmas... a vitamix is pretty much THE blender of all blenders. It can crush icecubes, juice vegetables, make soup, you name it. And to this day I use that machine for making healthy food everyday. Thank you Jeffrey! ;)

      Hi =)

       For some reason this does not look much like me, but it is me... this is my tired face from this morning. But now I feel refreshed  and blessed after having been on skype with my Mom for 2 whole hours. She taught me how to make sweet and sour sauce over skype. =) So I made lunch while chatting - quinoa with carrots and onion in sweet and sour sauce. Thank you technology for making California-Norway seem a little bit closer. I love my mom, she is always so happy and encouraging. 

      Other then that I`ve spent time on making a cheesecake  - I use cottage cheese, and a gluten free crust from graham crackers (recipe for the crackers is here). I`ll be posting pictures later. The cake is SUPER cute...it`s pink. My friend is having a (gluten free! I`m in heaven) Girls Night and I`m bringing my cake.

      My work out went something like this:
      Warm up - 1000 Skipping rope jumps
      Triceps dip 100 - I did them in 2.23 sec. 30 seconds faster then yesterday!
      Mountain climber, push up, pull up, bicycle crunch, lunges w/bodybar and more push ups was what filled the main part of my work out. 
      My upper body is exhausted.

      I better jump in the shower and get ready for the party tonight. Wooh!

      Bits and pieces from my day

      Started with a Solid breakfast....
      Gluten free buffins that I made the other day, with brown goat cheese and raspberry jam..
      sooooooo yummi!
      Then I made a little Christmas decoration, using tangerines and some cloves
      Many people use this for counting down days till Christmas, when making it - put the same amount of cloves as there is days left till Christmas, every day you pull out one clove...=)
      Woow, Birthday party for a friend at the bowling aly, 
      I actually got a strike right after this photo was taken... Yes, I was very surprised.
      It was super fun thou.
      Becky my bff sure knows how to bowl with style. SHE is amazing!

      Trust the process

         
      The last week has been an amazing one. Traveling always brings new inspiration, like this quote I found. I was walking through San Francisco airport and saw these quotablecards. And this one in particular just stood out to me. -Slow down, calm down, don't worry, don't hurry, trust the process.- It can seem so overwhelming to focuse on our goal sometimes, they can seem so far away. Wether it's being in school, pursuing dreams, fitness related or even in relationships. It takes time to build anything that is good. 
      I love my Husband, and I love being married so so much. It's been almost four years since I first met Jeffrey. We got introduced and shook hands, and I knew I had laid my eyes on a very special Man.

      It has been an amazing time getting to know him and his family. You see, one of my biggest dream growing up, was to get married. But not with just anyone, The one. And going from knowing of someone, to deciding that it is Mr.Right takes allot of time. There has been thousands of conversations, laughs and hugs over the last four years. We have travelled, celebrated and cried together. It is one of those things that cannot be hurried, I think. And it is the most rewarding thing...investing in relationships. 
      This fall we decided to get some photos taken with our family
